    Laurent made just four barrels of this wine from 25 year-old  vines planted in limestone-clay soils on Château-Chalon’s north facing slope. Aged for 18 months in three year old barrels during which time it was simply topped up, this wine has good weight, texture and length, typical almondy notes and finishes quite saline. For drinking now to 2022+.

Grape
100% Chardonnay. 30 year old vines on 3309 rootstock, trained guyot simple and double. Clonal selection (Rupestris). 6.500 p/ha.
Terroir
Limestone and clay. 250m above sea-level. 5% gradient with a South-Easterly aspect.
Viticulture
Works along the lines of organic viticulture. Debudding but no green harvesting. Leaves grass to grow every other row. Ploughing during Spring and at the beginning of the Summer. Copper and sulphur used against oidium and mildiou. Organic compost sometimes used. Manuel harvest. 25 hlha yields on average.
Vinification
Destalks. Long and slow pressing (3h) using a pneumatic press. Settling of the juice for 12 hours. Natural fermentation for 1 month at 22ºC to 25ºC, in 5 to 10 years old 225L barrels, using natural yeasts only. No chaptalisation. Malolactics completed. Aged for 12 months in 5 to 10 years old 225L barrels, with regular ouillage and no racking. No fining and light filtration. Between 500 and 1.200 bts produced in total depending on vintages. Additional infos: Laurent Macle has started to produce topped-up chardonnay in 2007 (a new wine for the domain) and has changed the label for some vintages. The label for the 2012 vintage was designed by Olivier Grosjean's wife (Olivier is known as Olif from "Le blog d'Olif") and is dedicated to Laurent’s new born daughter Jeanne (“A la santé de Jeanne!).
