    Tesson is invariably Fichet’s top and most long lived wine, and many of the growers believe it is well up to fine premier cru status.  Located above the village on a perfectly sloping hillside facing due east, with well balanced soil (30 to 40cm deep), combining a perfect blend of both limestone and clay, Jean-Philippe has three parcels of vines planted in 1945, 1965 and 1976. Aged in 16% new oak to 5yo for a year before 6 months in cuve, this wine is silky, precise, graceful with a beautiful play on the palate. Fichet’s Tesson ages extremely well, there is definitely no hint of premox, and from a vintage in which Jean-Philippe was particularly successful this wine shows exactly why white Burgundy retains its allure. For drinking now to 2019.

Viticulture
Severe debudding to 3 to 4 stems off the main branch. Vendanges en vert if necessary. Ploughs 4 to 5 times a year depending on growth of grass. Uses fungicide against oidium. No pesticides or herbicides. Hand harvested100%. Carefully sorted. 40 hectos per hectare yield.
Vinification
Pressed and separated off the gross lees after 1 day. Natural indigenous yeasts. Transferred directly into oak for fermentation. Malolactics completed. Batonnage or no depending upon vintage. Kept in 1st cellar for 12 months at 14º, then racked and moved into 2nd cellar where temp allowed to drop to 5º or 6º which precipitates tartrates and throws the wine clear. 1/6 new to 5 yr old 225ltr barrels (medium toast from 3 tonneleries). Racked once during 18 month elevage on fine lees. Fined and filtered lightly by kieselghur if necessary. Bottled after 18 months using their own equipment.
