    The vineyard, once a quarry that supplied stone for Les Hospices de Beaune, is due south facing, with a subsoil of quarry debris. The vines roots grow deep and bring a coolness and minerality to the warm fruit. A rich, complex and layered wine of lovely balance. For drinking now to 2019+.

Grape
Chardonnay. 25 year old vines. Clonale selection (high quality clones) on 161.49 rootstock. Trained to double Cordon. Density is 10.000 p/ha.
Terroir
Former quarry, lots of stones (quarry debris), at a 250m elevation above sea level. Flat aspect. South exposition. Soil is between 5 to 10m deep (quarry debris).
Viticulture
Organic certification (Ecocert©); biodynamic certification with Biodyvin©. Debudding. No green harvest, or only if necessary. Leaves the grass to grow every other row to stimulate microbic activity from July to April (earthing-up) and then ploughs during the vegetative period. Sulphur, Bordeaux mix and biodynamic preparations are used against oidium and mildiou. No herbicides and no pest control. Organic compost is used. Manual selection during harvest and sorting of the grapes in the vineyard. Yield of 45 to 50 h/h.
Vinification
Doesn’t destalk. Press with a Vasselin press. Very slow pressing. Settling of the juice for 12 hours. Grapes are crushed. Fermentation in 10 year old 350L barrels, using indigenous, natural yeast. No chaptalisation. Temperature is between 16°C and 20°C max. Alcoholic fermentation for 1 month at least. Malolactics completed. Aged in 10 year old 350L barrels (on fine lees) for 11 months, with no racking and no lees stirring (bâtonnage). One domaine bottling done by a service provider in September with a light filtration with Kieselgur, and usually no fining (or very rarely with bentonite if there is trace of protein). Production is around 4.000 bottles.
