    This comes from vines planted by a selection massale in 1989 on a steep south-west facing slope that is one of the appellation’s finest terroirs (effectively a continuation of le Montrachet as the hillside swings round to the west) where the soil is very sparce and you effectively find just ground up limestone. Aged in 20% new oak up to five year old barrels, this is an attractive wine, accessible in its youth. For drinking now to 2020.

Terroir
Limestone at 300m elevation above sea level. 8-10% slopes, south-west facing.
Viticulture
Severe debudding to limit yields. No green harvest. One weeding in spring and then ploughing. Sulphur and copper are used against oidium and mildew. Organic fertilizer and organic compost are added in the spring. Conventional treatments against pest and insects. Manual selection during harvest. Yield of 45 to 50 hl/ha.
Vinification
Does not destalk. Pneumatic pressing with stems for 1h to 1h30 and settling of the juice for 9 to 48h. Fermentation in new to 5yo oak 228L barrels for 3 months, using indigenous, natural yeast. No chaptalisation. Full malolactic fermentation. Élevage in 228L barrels (20% new) with one racking before fining and lees stirring (bâtonnage). One domaine bottling in August with fining and filtration by plates. Production is 11,000 bottles
