    Sylvain's holdings totalling 8.5h are largely in Saint-Aubin. The Champlot vines planted in marl soils with a south-west aspect are between 10-20yo, and aged in 20% new to 5yo barrels, give a delicious wine enjoyable in its youth with good weight of citrus fruit, mango and hazelnut on the palate, tethered by a refreshing balancing acidity. Excellent value for money. For drinking now to 2020.

Chardonnay planted at 10,000 vines per hectare. 15 year old vines. Trained to single Guyot.
White clay and limestone at a 320m elevation above sea level. 12% slopes with a West exposition.
Severe debudding to limit yields. No green harvest. One weeding in Spring and then plough from June to September. Sulphur and copper are used against oidium and mildiou. Organic fertilizer and organic compost are added occasionally. Organic treatments. Conventional treatments against pest and insects. Manual selection during harvest. Yield of 45 to 50 h/h.
Does not destalk. Pneumatic pressing with stems for 1h30 and settling of the juice for 24 to 48h. Fermentation in 228L barrels, using indigenous, natural yeast. Chaptalises by 1% if needed (according to vintages). Full malolactic fermentation. Élevage in new to 5yo 228L barrels (20 to 30% new oak) for 11 months, with one racking before fining and lees stirring (bâtonnage). One domaine bottling in August with fining and filtration by plates. Production is 6,000 bottles.
