    According to Damien the 60yo late ripening vines planted south-west just around the corner from Chatenière, give the most mineral of all their St-Aubin vineyards. The soils here are white marls that produce a dense, vigourous, ripe lemon, mineral driven wine that slowly unwinds to reveal its qualities. For drinking now to 2020.

20 hectares (of which 7.5 planted with pinot). 1ha for 1C En Montceau.
Grape
Chardonnay planted at 10,000 vines per hectare. 30 year old vines. Trained to single Guyot.
Terroir
Clay and limestone at a 280m elevation above sea level. 5% slopes with a South and a West exposition. Soil is 30cm deep.
Viticulture
Debudding. No green harvest. The soil is ploughed all year long. Sustainable viticulture - ‘Lutte raisonnée’ is practised against oidium and mildiou. Manual selection during harvest. Yield of 50 h/h.
Vinification
Does not destalk. Pneumatic pressing with stems. Fermentation in 228L barrels at 20°C, using indigenous, natural yeast. Chaptalises by 0.5% if needed (according to vintages). Full malolactic fermentation. Élevage in 228L barrels and 20hl foudres for 10 months with no racking and no lees stirring. One domaine bottling in August using Diam corks. Fined with casein and filtered kieselghur.
