    Pierres Blanches lies just above the Beaune 1er Cru les Bressandes with an ideal easterly aspect.  There’s about 1½ metres of sandy clay overlying limestone mother-rock.  Low yielding, deep rooted bio-dynamically tended vines give a crystalline pure wine, with zesty citrus fruits and hazlenuts and long saline finish. For drinking now to 2020.

Size of domaine
10 hectares total of which this cuvée is 1.5 ha.
Grape
100% Chardonnay. Massale selection on SO4 rootstock. 35 year old vines. Trained to single Guyot.
Terroir
Calcareous lava (very white); nodules containing inclusions of Barium at a 300m elevation above sea level. East exposition. Soil is between 20 and 140cm deep.
Viticulture
Organic certification (Ecocert©); biodynamic certification in process with Biodyvin©. Debudding. No green harvest. Leaves the grass to grow every other row to stimulate microbic activity from July to March and then plough from April to mid-July. Sulphur, copper and biodynamic preparations are used against oidium and mildiou. No herbicides and no pest control. No fertilizer. Manual selection during harvest and ‘table de trie’. Yield of 31 h/h.
Vinification
Does not destalk. Horizontal pressing with stems for 3 to 4 hours and settling of the juice for 36 hours. Fermentation in 228L barrels, using indigenous, natural yeast, at 23°C. Temperature is controlled using cooling coils. No chaptalisation. Alcoholic fermentation for 2 ½ months. Full malolactic fermentation. Élevage in 4 to 12 years old 228L barrels for 15 to 18 months, with one racking and no lees stirring (bâtonnage). One domaine bottling in December or March with no fining and a light filtration by Kieselgur. Production is around 5.000 bottles.
