    The initial still wine from the 2014 vintage was oak aged in new to thirteen year old barrels for ten months, before being bottled and then disgorged 17 months later in December 2015, at which point 2g/l dosage was added. Rich, vinous, dense, complex and extremely long on the palate but all the time beautifully fresh and balanced. For drinking now to 2019.

Grape
90% Pinot Meunier, 46 year old vines. 10% Pinot Noir, Pinot Gris, Chardonnay 10 yrs old. Massale selection.
Terroir
Light sandy soil with clay/limestone strata. Lots of tiny fossils – mini-sea-shells etc.
Viticulture
Bio-dynamic viticulture. Leaves grass to grow during winter and ploughs during spring and summer up to the harvest in order to restrict yield. Likes to pick when the leaves have started to change colour from green to an autumn colour, when the peduncle connecting the grape bunch to vine’s fruiting shoot is brown and ripe. Only with super-ripe skins can pinot meunier’s delicate aromatic flavour profile be liberated into the juice. Hand-harvest. Yields of 45 to 50 hectos per hectare.
Vinification
Likes to ferment on the skins for as long as possible (up to 8 hours) before running juice off the skins into barrel for the rest of the fermentation. Natural indigenous yeasts only. Wine of only one vintage, no reserve wine. In 2006 the wine was vinified and aged as follows: new 450ltr barrel (13%), 2 year old 600 litre barrels (24%), and 4-13 year old 228 litre barrels (63%). Aged for 10 months before bottling with no fining or filtration. Disgorged 17 months later with 2 g/l dosage.
