    A blend of 85% 2011 vintage and 15% reserve wines, disgorged in September 2015 after 38 months in bottle, with a dosage of 2.4g/l, this is rich and vinous, highlighting the powerful character of Ambonnay, yet with the restraint and precision that are so evident in Marguet’s champagnes. For drinking now to 2019.

Viticulture
Debud twice so never need to practice vendanges en vert. Ploughs with a horse from March to July. Biodynamic and naturotherapy treatments against oidium and mildiou. Manual harvest.
Vinification
Press with a Coquard 4000 kg. Allow juice to settle for 24 hours, no enzymes used. Natural, indigenous yeasts only for initial fermentation. No chaptalisation. The wine is vinified in 225L barrels with no racking. Malolactics completed. Aged for 9 months in barrels. Uses 32% reserve wines. The wine is filtered. Bottled off in June after 9 months. 2 to 6 years sur latte, under cap. 24 g/l for the secondary fermentation. 4 g/l of dosage (made of organic cane sugar). Kept for 3 months in cave before release. 6 disgorgement per year.
