    Raphaël made this exceptional quality rosé from old vines in the village of Ormes. It comes entirely from the 2013 vintage, and its delicate colour comes from the addition of 5% still Coteaux Champenois pinot noir. It was then aged under cork for 2.5 years and disgorged in March last year with a dosage of 3g/l. It is fragrant and floral with succulent aromas of strawberry, raspberry and pomegranate, similar incisive flavours with a fresh, vital cut and saline minerality. For drinking now to 2020.

Vineyard of Ormes (in the northern section of Montagne de Reims called Petite Montagne).

9.3 hectares in total
60% Pinot Noir, 30% Chardonnay and 10% Pinot Meunier (5% red wines being added and not from being macerated on the skin).
Gravelly terroir.
8 hectares conducted in ‘carefully considered’ viticulture and 1 hectare in bio-dynamism since 2007. 7 full-time employees work in the vineyard/cave. Debud twice so never need to practice vendanges en vert. Plough in the spring and autumn. Control the growth of grass (cut back when too vigorous). No herbicides. Have a large team of 40 harvesters for the manual harvest. Control the quality of harvesters’ work rigorously. Yields of 72 hectos per hectare on average.
Use a pneumatic press. Allow juice to settle for 12 hours, no enzymes used. Natural, indigenous yeasts only for initial fermentation. 3 g/l of dosage (made of old reserve wines and organic cane sugar). Kept for 3 months in cave before release.
