    Only 1800 bottles of this single vineyard (les Misy) champagne are made from low yielding 45 year old vines planted in marl-limestone soil on a north facing slop in Mareuil–le-Port. Vinified in 350 and 600 ltr barrels and aged for 3 years in bottle under cork, it already shows a subtle complexity, with soil driven depths of aroma and citrusy acidity, buttressing the rich flavours of orchard and stone fruit. Dosage 3g/l. For drinking now to 2019.

Terroir
Limestone and marls (with lots of fossils). North aspect (to capture the freshness of Pinot Meunier).
Viticulture
8 hectares conducted in ‘carefully considered’ viticulture and 1 hectare in bio-dynamism since 2007. 7 full-time employees work in the vineyard/cave. Debud twice so never need to practice vendanges en vert. Plough in the spring and autumn. Control the growth of grass (cut back when too vigorous). No herbicides. Have a large team of 40 harvesters for the manual harvest. Control the quality of harvesters’ work rigorously. Yields of 70 hectos per hectare on average.
Vinification
Use a pneumatic press. Allow juice to settle for 12 hours, no enzymes used. Natural, indigenous yeasts only for initial fermentation. The wine is vinified in 350L and 600L barrels. The fermentation lasts between 1-2 months. Racked once and add sulphur to prevent malo-lactic fermentation (in order to preserve freshness). Aged on fine lees for 8 months. No batonnage and no filtration. 4 g/l of dosage (Extra-Brut). Kept for 30 months in cave before release. 1800 bottles produced in 2007.
