    Like the Val Vilaine this wine comes from 35 year old vines on south-west facing slopes with a limestone clay base on the Côte de Béchalin, a lieu-dit in Celles-sur-Ource. Disgorged with zero dosage (like all of Cédric’s champagnes) after six years bottle age in April 2016. There is a great purity to the wine, it’s incredibly fresh, feels very close to the grape, with lovely minty notes, beautifully textured and long with gentle bitters on the finish. Best carafed. For drinking now to 2020.

Terroir
Bands of Kimmeridgian soil common to Chablis. The Cote des Bars is closer to Chablis than to Reims. South-West facing.
Viticulture
Debud. Don’t carry out vendanges en vert. Plough from spring until the vine flowers in June. Leave grass to grow naturally throughout the vineyard. No chemical herbicides or pesticides. Harvested by hand. 26 hectos per hectare yield.
Vinification
Pressed by traditional 4000 kgs Coquard press. Leaves juice to settle for 24 hours. Vinified in stainless steel (at 18-20°C) using natural, indigenous yeasts. Wines are made using only first-run juice. The wine is left on its fine lees over the winter where it naturally carries out its malolactic fermentation. After 6 months in cuve it is racked and bottled off. Use only the wine of 1 vintage (no reserve wine). Bewteen 20-22 g/l of sugar is used for the secondary fermentation for a gentler, finer mousse. Disgorged by hand with no dosage after 80 months. Cedric gives "La Parcelle" the longest aging regimen of all his wines. 2.000bts produced on average.
