    This comes from three parcels (two hectares) around Courgis: la Menarde, les Malantes and Pattes Loup, hence the name of the domaine. The vines are 40 years old, issued from a massale selection, and yields average just 43hh (60 permitted). This wine was aged for 13 months, two thirds in stainless steel, one third in seven hectos cement eggs. The balance is very good indeed with ripe grapefruit, hint of apricot and saline minerality possibly due to the underlying limestone. For drinking now to 2023.

100% chardonnay. Rootstock 41B. Massal selection on vines from Les Malantes. Clonal selection on vines from La Menarde. 40 years old vines. Between 5000 and 8333 vines per hectare on average
Limestone clay; South aspect on 15% to 30% hillside; 230 mtrs above sea-level. Soil depth between 60cm and 1.3m approx.
Debudding. Don’t carry out vendanges en vert. Ploughing in Spring. Leave grass to grow naturally throughout the vineyard. No chemical herbicides or pesticides, only organic fertilizers. Organic certification with Ecocert©. Harvested by hand. Use sorting table. 43 hectos per hectare yield
Pressing for 2.5hrs by pneumatic press, settling of the juice for 18 hrs. Fermentation in stainless steel and 7hl “concrete egg” (at 21°C) using natural, indigenous yeasts for 9 to 12 months. The wine naturally carries out its malolactic fermentation. Aged for 13 months in stainless steel. No bâtonnage. One racking. One pre-filtration and no collage. Two bottlings between December and March. 15000 bottles produced on average
