    This is the main cuvée of the domaine from seven hectares of vineyards spread over six well placed parcels with an average vine age of 25 years. Nathalie Oudin is not afraid to allow the wine good exposure to air during the malolactic fermentation. The wine has very precise citrus fruit, good texture and a saline quality suggestive of the limestone bedrock, and feels very composed and at ease. For drinking now to 2023.

100% chardonnay. 25 year old vines on 41B and SO4 rootstock. 5500 vines per hectare on average
Stony, kimmeridgian limestone. 300 mtrs above sea-level. South-South/East aspect on 15% to 20% slope. Soil depth 1.5m approx.
Debud twice yearly, never carry out vendanges en vert. Uses sulphur against oidium. No chemical fertilisers or weedkillers. Ploughs the soil 3 times starting in March. Harvests 100% by machine in this vineyard. Vines pruned to ensure never exceeds 50 hectos per hectare.
No destalking. Pressing for 2.5 hrs by a pneumatic press, settling of the juice for 24 hrs and vinification in stainless steel cuve. Use natural indigenous yeasts. Sometimes have to chaptalise 0.5. Malolactics completed and racked twice. In certain vintages carries out bâtonnage of the fine lees during a 12 months ageing period (bottled in September and January). Fined with bentonite and filtered lightly with plate filter. Bottled with their own equipment. 15000 bottles produced on average
