    The brothers started to plant their vines in 1985 on excellent quality roostock (3309 strictly no high yielding SO4 which is the most widely planted in Chablis) in kimmeridgian limestone.The wine has been 100% cuve aged before bottling after one year with high quality corks and just 54mg/l of sulphur (over a third lower than the norm). There is a character very reminiscent of the sea about this wine, like a delicious oyster, with iodine and saline notes, and good viticulture and lower yields help to give the wine great texture and balance. For drinking now to 2021.

100% chardonnay. 15 to 20 year old vines. 7.300 vines per hectare on average
Chalky-clay on kimmeridgian limestone.
Organic viticulture. Debud twice yearly, never carry out vendanges en vert. Uses sulphur against oidium. No chemical fertilisers or weedkillers. Ploughs the soil. Harvests 100% by machine in this vineyard. Vines pruned to ensure never exceeds 40 hectos per hectare.
No destalking. Pressing for 2.5 hrs by a pneumatic press, settling of the juice for 24 hrs and vinification in 90hl stainless steel tanks. Use natural indigenous yeasts. Fermentation at 22°C. Malolactics completed and racked twice. In certain vintages carries out bâtonnage of the fine lees during a 12 months ageing period. Fined with bentonite and filtered lightly by Kieselghur. Bottled with their own equipment. 140.000 bottles produced on average.
