    This wine is made from tiny yields of grapes concentrated by pourriture noble. It is a rich complex wine with pears and apples coming through very clearly on both the nose and palate. This wine would be the perfect match for foie gras, or go equally well with chocolate based desserts or blue cheese. For drinking now to 2021.

Grape
100% Loin de l’Oeil – average vine age 25 yrs Root stocks- R110, R99, 3309. Selection massale and clone 733. Vine average age now 25 years. Plant density of 4,000 vines per hectare and trained Cordon de Royat.
Terroir
Ancient river terrace ‘graves’ of Tarn at 200 metres above sea level. Alluvium soil. Add lime to soil otherwise too acidic. Soil depth of between 1.5 and 3 metres.
Viticulture
De-buds and green harvests. Cereals sown to compete against vines. Needs a touch of rain to trigger noble rot – then good weather & wind to concentrate the juice. Normally harvests in various ‘tries’ 8th-20th October.
Vinification
Fermented in barrels (15% new) up to 7 yrs old and of 225 and 400 litres (medium toast). ST yeasts used. Fermentation (between 18°C and 23°C)over 1 month. Pressed and returned to oak. 10 month elevage. 162g/l of residual sugar. 8-16,000 50cl bts produced per year.
