    Organic viticulture from 35 year old vines whose roots penetrate deep into the bed of limestone just 30cm below the surface. A beautiful mid cherry colour that extends right to the edge, the very pure, clear cut fruit mingles fresh cherries and sappy red fruits. Oak elevage is well handled and there is a savoury backdrop of fine grained tannins. For drinking now to 2020.

Grape
95% Merlot, 5% Cabernet Franc on 3309 and 161-49 rootstock. 35 year old vines average. 5.500 to 6.200 vines per hectare. Vines trained guyot bordelaise.
Terroir
Clay and limestone at an elevation of 80 metres and facing south and north. Depth of the soil is 40cm.
Viticulture
Organic viticulture (certified by Ecocert©). De budding but green harvesting only if needed. Mechanical management of grass and mowing. Superficial scraping. Ploughing every three years. Sulphur and copper are used against oidium and mildew. No fertilizers. Hand harvested and table de trie used to check every individual grape. 45 hectos per hectare yields.
Vinification
Grapes are all destemmed. No prefermentive cold maceration. Grapes are crushed before fermentation. Alcoholic fermentation in stainless steel and concrete vats for 2 weeks (at 24°C; max 28°C) using natural, indigenous yeasts (made from a homemade yeast starter). Vats are thermoregulated. One pumping over and cap punching per day during fermentation. 17 days cuvaison. Pressed with a vertical hydraulic press. Press wine is blended with free run juice. Aged for 18 months (on average) in stainless steel and oak barrels with one racking for the wines kept in barrels. No bâtonnage, no filtration and no collage. Two bottlings during the year, done by a service provider. 60.000 bottles produced on average.
