    Four hectares of 45yo vines worked bio-dynamically give this exceptional and very good value wine. Aged for one year in larger foudres as well as barrels followed by a year in cement, this patient approach gives a very pure fruited harmonious wine, that is already starting to show very well with good depth to its plummy, spicy fruit, supple tannins and an attractive salinity on the finish. Low sulphur. For drinking now to 2022+.

45 yr old vines. Fercal rootstock. 6,000 to 8,000 vines per hectare trained guyot simple.
Clay-limestone (Molasses du Fronsadais). 50m above sea-level. 20% slope, facing east and south. Soil is 1m deep.
Organic certification and biodynamic certification. Debudding, no green harvest. Ploughs the soil in autumn and spring. Bordeaux mix and sulphur used against oidium and mildew. No insecticides and no fertilisers used. Harvest is manual. Sorting table is used. Yields average 35 hectos per hectare.
Classic maceration. Destemming 100%. No chaptalisaton. Fermentation in 100 hecto wooden conical tanks (5 – 10 yrs old). Fermentation at 26°C (30°C max). Temperature is controlled by thermo-regulation. Alcoholic fermentation over 1 week. Pumped over twice a day during fermentation. 2 weeks cuvaison. Free juice from pressing is blended during ageing. Malolactic fermentation in cellar. No batonnage. No racking. No fining, light filtration by plates if necessary. The wine is aged for 12 months in 300L foudres (10% new maximum), and then 12 months in concrete vats. One bottling per year, either September or January. 10,000 bottles produced on average.
