    From an excellent vintage for Sauternes, on the palate this has a sumptuously rich depth of stewed apricots, dates and figs and a little spice on the finish. Very harmonious wine with a superb play on the palate. Unfined and unfiltered. For drinking now to 2025.

Grape
90% sémillon 5% Sauvignon 5% Muscadelle. Massal selection on 101-14 rootstock. Vines grafted in 1956. 55 years old vines. 5500 vines per hectare on average
Terroir
Subsoil: limestone without carbonate. Top soil: sandy silt and pebbles, 10 mtrs above sea-level. South facing. Soil depth approx. 30cm
Viticulture
No debudding. Don’t carry out vendanges en vert. Uses a strimmer to manage the grass. Vines are constantly “buttée”. No chemical herbicides or pesticides, only biodynamic compost. Biodynamic certification with Ecocert© and Dynamis©. Harvested by hand. Between 9 and 11 hectos per hectare yield on average
Vinification
Do not destalk. Pressed by a vertical press. Don’t leave the juice to settle. Fermentation in barrels (no control of temperature) using natural, indigenous yeasts for 1 month up to 2 years. No malolactic fermentation. Aged for 5 years in 99 years old accacia barrels. 2 to 3 rackings per year. No collage and no filtration. Bottled with 310 g/l of residual sugar. Between 5 and 8 bottling during the year in July / August. Uses Diam© corks. 2000 bottles produced on average.
