    Les Rosiers is the finest of Aviet's three cuvées of Trousseau. It lies alongside the famous walled clos of vines belonging to Pasteur, and comprises ½ hectare of south facing, 40yo vines, planted in a quick draining, gravelly soil. It has a similar delicate, mid-red colour to the Bruyères, clarity of fruit and mineral stamp, but at the same time a density, richness and good structure, with spicy notes on the finish. Will age very well. For drinking now to 2024.

Grape
100% Trousseau. Old massal selection from vineyard planted in 1919 on SO4 rootstock. 40 year old vines. 6.000 vines per hectare on average. Vines are trained guyot double.
Terroir
Gravels on clay. South aspect on 30º slopes. 350 mtrs above sea-level.
Viticulture
Debudding. No vendanges en vert; only thinning out the leaves. Works the soil (ploughs every other row, scrapping of the surface). Practices “lutte raisonnée” to fight against oidium, mildew, pests and insects. Organic fertilizers (manure) are used every 5 to 10 years. Harvested by hand with a very severe sorting in the vineyard. 35 hectos per hectare yield
Vinification
100% destalking. The grapes are lightly crushed. Natural cold pre-fermentation depending on the temperature at the reception of the harvest. Alcoholic fermentation in 60 year old 23hl old foudre. Fermentation for 3 weeks (at 22°C) using natural, indigenous yeasts. No chaptalisation. Temperature is controlled. No cap punching. Pumping-over in the morning and in the evening for 10 days. 15 days cuvaison after the end of the fermentation. The press wine is blended. Aged for 18 months in 23hl old foudres. Racking is done depending upon tasting. No bâtonnage, no collage and light filtration by plates. Only one bottling per year in January. Natural cork. 2.000 bottles produced.
