    Melon à queue rouge is an ancient strain of chardonnay (here from 50yo vines) grown by only three top producers in Arbois. Aged in old foudres for three years and topped up, this is an unbelievably fine wine, with a pale gold colour, the mouthfeel of a fine white burgundy, restrained citrus fruits, a good cut of acidity, and very saline on the finish. For drinking now to 2020.

Grape
100% Melon à Queue rouge (old strain of Chardonnay). Old massal selection (from vines planted in 1929) on 3309 rootstock. 45 year old vines. 6.000 vines per hectare on average. Vines are trained guyot double.
Terroir
Silty marls (i.e. éboulis limoneux sur marnes). South/West aspect on gentle hillside. 300 mtrs above sea-level.
Viticulture
Debudding. No vendanges en vert. Works the soil (ploughs every other row). Practices “lutte raisonnée” to fight against oidium, mildew, pests and insects. Scrapping under the rows. Organic fertilizers (manure) are used every 5 to 10 years. Harvested by hand with a very severe sorting in the vineyard. 40 hectos per hectare yield
Vinification
100% destalking. Pressed by a pneumatic press for 2h30. Settling of the juice for one night. Alcoholic fermentation in 30 year old 28hl foudre. Fermentation for 3 weeks (at 17ºC on average - 22°C max.) using natural, indigenous yeasts. Chaptalises sometimes depending on vintages. Temperature is controlled. Malolactics completed. Aged for 3 years in 30 year old 28hl foudre with regular ouillage (i.e. topped-up). No racking, no bâtonnage, no collage and light filtration by plates. Only one bottling per year. Natural cork. 3.500 bottles produced.
