    Vin Jaune is the Jura region’s real speciality, from late-harvested savagnin – pressed and then aged under a yeast veil in older oak for six years, then assembled and aged in foudre for a further year. It is bottled (naturally, without filtration) in a distinctive ‘clavelin’ with a long neck and hunched shoulders – which holds 62cl – the amount of one litre of wine that is said to remain after six years of evaporation. Superb with rich, creamy dishes, it has a flavour not dissimilar to an aged amontillado sherry, with walnut and truffley tones. For drinking now to 2100.

100% Savagnin – 40 yrs old average (30+50 yr old). Selection massale. 6000 vines per hectare, trained single guyot.
Grey, blue and red marls on gentle 10-15% slopes with west and south-westerly aspect. 300 to 350m above sea-level.
Debud manually. Never carried out vendanges en vert. The soil is turned over 1 row in 2 during autumn, and the practice is alternated in spring. Uses sulphur against oidium, no pesticides and no herbicides. Organic fertiliser used very occasionally. Hand harvest. Harvested around mid-October (savagnin for vin jaune always harvested last on domaine). Initial yield 30 hectos per hectare.
Pressed by pneumatic press. Ferments in 20-50 yr old foudres – after alcoholic + malo finished then transferred in to 5-15 yr old fûts (228 ltrs) where ages for 7 yrs (minimum 6¼ yrs). Yeast veil forms, no topping up. Bottled unfiltered in 62cl ‘clavellin’ (38% approx of wine evaporates during elevage). Wine is assembled from the various barrels and left to decant over 1 winter before bottling without fining or filtration.
