    Matthieu  produces this wine from vines averaging 30yo from gentle south facing hillsides  with a sandstone/limestone base. Fermented dry it’s a really attractive ‘vin de  plaisir’, that’s perfect to drink as an aperitif. On the nose you find hints of  mandarine, mint and white flowers, and the palate is zesty and racy, with pears  showing on the finish. For drinking now to 2021.

Vines planted in 1996, 1984 & 1963. Massale selection on 3309 & 5BB rootstock. 5000 vines per hectare trained double guyot.
South-facing hillsides. 10-20cm of sandstone (Bunsandstein) topsoil. 300 to 450m above sea-level.
Certified organic with Ecocert© and bio-dynamic with Demeter©. Debud but never carry out vendanges en vert. Raking every other row from March to June. Allow grass to grow between rows, lightly rolling it and mowing in August. Uses sulphur and very low levels of copper against oidium and mildew. Uses organic insecticide against insects and pests (bacillus thuringiensis). House compost used every 5 years, a mix of grape residue and cow manure. Manual harvest, carefully sorted in the vineyards. 55 hectos per hectare yield.
Pneumatic press. Long slow pressing (8 hours) of the whole bunch, not followed by a settling period. Vinified in ancient 20 to 30hl foudres at 12- 25°C. No chaptalisation. The foudres are not temperature controlled. The wine is allowed to follow its natural course at its own rhythm using its own natural indigenous yeasts. Left on total lees from fermentation, with just one racking in April. Malolactics are permitted. Aged in the same foudres as for the fermentation for 10 months. No batonnage, no fining, just filtered lightly by cellulose plaque. Bottled once a year at the end of August using their own equipment. 6500 bottles produced on average.
