Pinot Noir with an average age of 20 years with a plant density of 5,000 per hectare. Trained to double Guyot. Root stock 3309, SO4 and 5BB. Massale vine selection from old vines.
Chalk, chalk-sandstone and clay-chalk (Argilo calcaire) at an elevation of 300-430 meters and with a 30-40% slope facing south-west, south and south-east aspect. Soil depth is 20-50 cms
De-budding and no green harvesting. Grass between rows is rolled in the spring and cut before the harvest. Ploughing from mid-March to end June and 3-4 times per parcel. Bio-dynamic treatments to control mildew are Myco-sin (Clay, horsetail and yeast) followed by copper and tisane. Oidium is prevented using sulphur and tisane. Grass between rows is a habitat for predators of the grape worm, so it is never cut until the summer. Fertilise with bio-dynamic compost made at the domaine. Gentle hoeing of the topsoil at a depth of 5-7cms.Grapes selected at harvest. Yield of 45 h/h.
No de-stemming or crushing prior to pre-fermentive maceration for several days at 12C. Fermentation (natural yeasts) in open top stainless steel cuves at 18-21C. Pumping over (remontage) of whole grapes at the start of fermentation followed by one pigeage on subsequent days. No chaptalisation or cooling of vats. The press wine (pneumatic press) is added back immediately and the malo-lactic happens naturally between May and July of the following year. Élevage for 12 months is in 228 liter medium toast wooden ‘fûts’ between 4 and 20 years old. No batonnage, fining or filtration. Bottling at the domaine takes place in november of the second year and with natural cork. Registered Bio-dynamic with Demeter and Organic with Ecocert.
