In 2008, Jérôme produced just 2800 bottles of rosé made by assemblage, with 11% of red pinot meunier wine added to the still white before fermentation. Elevage was then carried out as per Jérôme’s main cuvée. A very delicate pale rosé, it offers red fruits with a hint of spice and mineral resonance. Very limited quantity. For drinking now to 2013.

domaine:2.2 hectares, 2 hectares in a single block Les Beguines, plus 0.20h adjacent parcel (includes a little Pinot Noir, Pinot Gris and Chardonnay) Grape: 90% Pinot Meunier, 46 year old vines. 10% Pinot Noir, Pinot Gris, Chardonnay 10 yrs old. Massale selection. Terroir: Light sandy soil with clay/limestone strata. Lots of tiny fossils – mini-sea-shells etc. Viticulture: Bio-dynamic viticulture. Leaves grass to grow during winter and ploughs during spring and summer up to the harvest in order to restrict yield. Likes to pick when the leaves have started to change colour from green to an autumn colour, when the peduncle connecting the grape bunch to vine’s fruiting shoot is brown and ripe. Only with super-ripe skins can pinot meunier’s delicate aromatic flavour profile be liberated into the juice. Hand-harvest. Yields of 45 to 50 hectos per hectare. Vinification: Press:
