A champagne with excellent weight and balance exuding delicate fragrances of flowers and beguiling red berry fruits with a mineral imprint from the limestone-clay soil. Made from just 1.45 hectares of 32 year old vines, it comes from the 2007 vintage, was cuve aged, and disgorged without dosage in July 2009. Limited quantity. For drinking now to 2013.

domaine:2½ hectares of which Inflorescence comprises 1.45h Grape: 100% Pinot Noir. S04 clone on 41B rootstock. 34 year old vines. 8000 vines per hectare. Terroir: Limestone clay on 20% hillside, 200 mtrs above sea-level. Viticulture: Debud. Don’t carry out vendanges en vert. Plough from spring until the vine flowers in June. Leave grass to grow naturally throughout the vineyard. No chemical herbicides or pesticides. Harvested by hand. 50 hectos per hectare yield. Vinification: Pressed by traditional 4000 kgs Coquard press. Leaves juice to settle for 24 hours. Vinified in stainless steel (at 18-20°C) using natural, indigenous yeasts. The wine is left on its fine lees over the winter where it naturally carries out its malolactic fermentation. After 6 months in cuve it is racked and bottled off. Use only the wine of 1 vintage (no reserve wine). Bewteen 20-22 g/l of sugar is used for the secondary fermentation for a gentler, finer mousse. Disgorged by hand with no dosage after 15 months. 8000bts produced on average. Press:
