Ulysse CollinGrape:100% Chardonnay BdeB (12.5% alc.)
This outstanding champagne comes 90% from the 2006 vintage and 10% 2005, and was disgorged with a 1.6g/l dosage in July 2010. It was aged in five year old barrels during its initial 12 months elevage, and so has more weight than Larmandier, and is rich and stylish, with a salty mineral undertone to the very precise fruit. For drinking now to 2014.

domaine:1.3 hectares (8000 bts produced) Grape: 100% Chardonnay, 35 years old. 9090 vines per hectare. Terroir: Limestone-clay soil with lots of flint. Soft chalk 30cm beneath. South-east aspect on 10% slope. Viticulture: Debudding, no vendanges en vert. Grass is allowed to grow naturally during the winter. Plough in March, April, May and June. Organic fertilisers occasionally used. No herbicides or pesticides 80 hectos per hectare. Manual harvest. Vinification: Traditional 1950s Coquard 4000 kg press. Allow juice to settle for between 5 and 10 hours. Vinified in 5 year old 225 ltr barrels, using natural indigenous yeasts. Around ½ degree chaptalisation typical. Long slow fermentation over 3 months. No malolactics in 2004. 10 months elevage in barrel and neither fined nor filtered before bottling off in July. Disgorged after 30+ months with zero dosage.
