Perle is the name for what was Crémant de Cramant, a style of champagne with 4kg of internal pressure instead of 6kg. It’s a style that produces an elegant wine with a light mousse and discreet bubbles. This is a perfect food champagne, with 5g/l dosage; it’s very expressive of the Cramant terroir, from vines up to 75 years old. For drinking now to 2014.

domaine:3½ hectares Grape: 100% Chardonnay (80% massale selection) 45 year old vines, 8,000 vines per hectare. Terroir: South/south-east facing vines in Cramant. Limestone clay topsoil (40-50cm) over cretaceous chalks. Viticulture: No pesticides. Uses organic fertiliser Copper and sulphur against mildew. Debuds. Doesn’t plough soil, but does allow grass to grow between vines in parcels. Hand harvest. 63hl/ha yield. Vinification: Pneumatic press. Allows juice to settle for 24 hours. Vinified in cuve. No chaptalisation. Malolactics completed. Elevage in cuves for 6 months. Adds only 18g/l (as opposed to 24g/l for the Brut NV) sugar for the secondary fermentation, creating a softer mousse. “Perle” what used to be called Cremant de Cramant. Blend 50% 2006, 50% 2005 (aged in cuve). Disgorged after 24 months, 5g/l dosage (made of cane sugar and their own reserve wines). 4,000 bts per year. Press:
