    Grape:40% Pinot Gris, 40% Pinot Auxerrois, 20% Pinot Noir (12.5% alc.)

    An excellent dry (dosage of 5g/l) sparkling wine from the 2007 vintage made by the méthode champenoise. Zesty and sapid with a delicate fruit, this makes for excellent party fizz and real value alternative to champagne.

    Grape: 38% Pinot Auxerrois (20yrs old), 35% Pinot Gris (20yrs old), 27% Pinot Noir (35 yrs old).  
    Terroir: Sand, clay and alluvium on a 15% slope (south-east and east facing), 50cm to 1m above the mother rocks  
    Viticulture: Bio-dynamic viticulture. Soil ploughed 4 to 5 times a year. Old wood not pruned off until March. But and debut the vines during the winter. Debud but never vendanges en vert. Use sulphur and homeopathic dose of the plant ‘horsetail’ gainst oidium. Use Bacillus Thurengiensis against pests. Never use fertiliser, only a touch of limestone if necessary. Manual harvest with careful selection carried out. Yield 60 hectos per hectare.  
    Vinification: Indigenous yeasts for the Pinot Gris and Pinot Noir. Selected yeasts for the pinot auxerrois. Pneumatic press. No chaptalisation of the base wine. Fermented at 20ºC for 3 to 4 weeks in stainless steel cuves. Elevage of 7 months. Malolactics blocked. No reserve wine used. Plaque filtered. 24 g/l for the secondary fermentation. Average of 18 month sur lattes under capsule. Disgorged 3 times a year. Dosage of 4.5g/l made of an organic concentrated must. Ecocert organic certification. Produce an average of 9000 bottles a year.
