    Grape:100% Pinot Gris (13.5% alc, 6g/l of rs)

    A very good terroir here, with decomposed sandstone and volcanic schists, on a steep west facing hillside. This is a pinot gris with exceptional balance, low residual, attractive typically smoky fruit on the nose and spicy peach fruit on the palate. For drinking now to 2013.

    Location: Schimberg lieu-dit vineyard is in Guebwiller and is a continuation of the Grand Cru Kitterlé vineyard. Dirler are based in Bergholtz

    17 hectares 
    Grape: Pinot Gris massale selection (by nurseryman Hébinger) on 3309 and Gravesac rootstock. Trained arched double guyot supported by a wire at a height of 25cms. with Average vine age of 10 years having been planted on three occasions between in 1996 and 1999. Plant density 6,000 vines per hectare  
    Terroir: Sandstone and volcanic soils at 400 metres with 25-30 % slopes facing south-west. Soil depth of 40cms.  
    Viticulture: De-buds and no green harvest. Ploughs the grass between rows in winter and spring. Treat oidium with sulphur and a tisane made from maceration of particular plants. Treat mildew with copper sulphate and tisanes of nettle and willow. Bacillus Thuringensis bacteria to treat pests. No fertiliser other than to adjust calcium/limestone levels. Jean uses a movable trellis wire to raise the vine vegetation and in order to prevent compaction of the soil. Highly selective manual harvest. Average yield of 40 h/h  
    Vinification: Whole bunches are pressed (Pneumatic) for 6 hours. Juice is settled for 15 hours before (natural yeast) fermentation in 115 year old 40 hectolitre wooden foudres. Fermenation temperature is maintained (a drapeau containing icy water is lowered in to the foudres) at between 19-22 C for 6 weeks. Malo-lactic is blocked. There follows a 9 month élevage in the same wooden foudres with no batonnage and 1 racking after the fermentation. Sheet filtration before a single bottling at the domaine in July. Natural 45mm cork. Certified Ecocert. Schimberg production is between 3,000 to 5,000 bottles per vintage.
