    Grape:100% Pinot Gris (13.5% alc, 7g/l of rs)

    Pinot Gris has the potential to be a big success story for Alsace but too often the grape sugars and alcohol spike up a little high. This very well balanced example shows how well it can be done. Offering citrus fruits, peach and spice, it is sapid and zesty, aided by a zip of acidity from limestone. For drinking now to 2011.

    Grape: 100% Pinot Gris from massale selection on 3309 rootstock. 5000 vines per hectare. 20 year old vines trained double-guyot 
    Terroir: Clay & sandstone on east-facing 15% slope, 300 mtrs above sea-level. The soil is 1 metre deep overlying sandstone mother rock. 
    Viticulture: Bio-dynamic viticulture. Soil ploughed 4 to 5 times a year. Old wood not pruned off until March. But and debut the vines during the winter. Debud but never vendanges en vert. Use sulphur and homeopathic dose of the plant ‘horsetail’ gainst oidium. Use Bacillus Thurengiensis against pests. Never use fertiliser, only a touch of limestone if necessary. Manual harvest with careful selection carried out. Yield 55 hectos per hectare. 
    Vinification: Pneumatic press. Selected yeasts. Vinified in stainless steel at an average temperature of 20°C for 3-6 weeks. Racked at the end of alcohol fermentation. Touch of sulphur added to prevent malo-latics. Old wooden foudres for elevage (8 months). Plaque filtered then bottled using their own bottling machine. 5000 bottles produced in 2005. Certified both organic and bio-dynamic.
