    30 year old vines sited to the north and east of Bergbieten produce this textbook pinot gris – which is clean and very spicy with a touch of limestone minerality. For drinking now to 2013.

    Grape: Pinot Gris (30 yr old vines) on SO4 rootstock. 5500 vines per hectare, trained guyot double 
    Terroir: ½ on the north facing slope of Grand Cru Altenberg de Bergbieten, ½ to the east. The soils are a mix of marl, limestone and clay. 
    Viticulture: Plough soil 1 row in 2. Grass sown in other row. This results in fewer leaves more aerated grapes bunches and smaller grapes. Add cow manure very occasionally. Debud and carry out vendanges en verts. Hand harvest 100% (the only 1 of 22 growers in Traenheim). Yield – 60 hectos per hectare. 
    Vinification: Natural yeast only. Uses pneumatic press. No maceration pelliculaire. Vinification in mix of stainless steel and old foudres, at an average temperature of 17°C and maximum 20°C . The vinification lasts between 3 weeks and 4 months. Malos blocked. Aged in 50-200 yr old oak foudres (which contain plaques to control temperature). 1 racking. Bottled in August. Fining no. Filtration – in spring kieselghur, and then plaque at bottling. Use their own bottling equipment
