    Aromas fairly leap out of the glass. It’s a rich yet restrained wine with pear, apples and exotic fruit flavours with a hint of spice. For drinking now to 2013.

    6 hectares, including 0.80 h of Pinot Gris in 5 parcels 
    Grape: Pinot Gris – 25 years old on average. Massale selection on 3309 rootstock. 
    Terroir: 60% of vines on east facing hillside in Kientzheim (limestone-clay), 40% on granitic slope in Ammerschwihr 
    Viticulture: Agro-bio certified. Plough 1 row in 2 and leave grass to grow in other row. Rotate this practice every year. Prefers to select vines not liable to overcrop as very much against debudding and especially vendanges en verts. Manual harvest end Sep, early October. Average yield 65 hectos per hectare. 
    Vinification: In stainless steel. Sometimes uses selected yeasts to guarantee a long, slow fermentation. The wine is fined with bentonite prior to the alcoholic fermentation, which lasts for 2 to 3 months. Racked after alcoholic fermentation, a little sulphur is added (which stops the malo-lactic fermentation). Then aged in mix of stainless steel and old Alsace foudres on fine lees. Prior to bottling the wine is filtered by kieselghur and then very gently by cellulose plaque. Bottling is in September 11 months after harvest using their own equipment.
