The 34 year old vines here give a very finely sculpted wine. Exquisitely balanced with citrus fruits, hints of verveine and mint and a characteristic sapid, saline note on the finish. For drinking now to 2020+.

domaine:16.9 hectares of which 0.45 hectares for Muscat Saering GC Grape: 90% Muscat Ottonel and 10% Muscat d’Alsace (25 years old) from massale selection on 5BB rootstock. 5700 vines per hectare trained double-guyot Terroir: South-east facing 20% slope, 280 mtrs above sea-level. Marl, limestone and sandstone soil mix 0.60m to 1.20m above sandstone & limestone mother rocks. Viticulture: Bio-dynamic viticulture. Soil ploughed 4 to 5 times a year. Old wood not pruned off until March. But and debut the vines during the winter. Debud but never vendanges en vert. Use sulphur and homeopathic dose of the plant ‘horsetail’ gainst oidium. Use Bacillus Thurengiensis against pests. Never use fertiliser, only a touch of limestone if necessary. Manual harvest with careful selection carried out. Yield 50 hectos per hectare. Vinification: Pneumatic press. Natural, indigenous yeasts. Vinified in stainless steel at an average temperature of 20°C over 3 weeks. Racked at the end of alcohol fermentation. Touch of sulphur added to prevent malo-latics. Stainless steel for elevage (8 months). Plaque filtered then bottled using their own bottling machine. Between 2-3000 bottles per year produced on average. Certified both organic and bio-dynamic. Press:
