    Grape:100% Gamay (13% alc.)

    Bernard Broyer uses old vines (up to 75 years old) low yields, a long maceration, minimal levels of sulphur and ages his Juliénas in large old foudres to allow the wine to breathe. It is rich with depth of fruit and a little tannin. For drinking now to 2011.

    Grape: Gamay – 5 parcels of grapes averaging 65 yrs of age. 10,000 vines per hectare in gobelet formation. Root stock-3309 
    Terroir: Very stony, primarily clay and limestone at 280 metres and facing south. Depth of soil- 0.70 metres. 
    Viticulture: No de-budding but occasionally green harvests. Sulphur and systemic treatments to prevent oidium. Controls grass and weeds chemically. Adds humus only. Manual harvest and table de trie. Yield 50 h/h. 
    Vinification: ‘Semi carbonique’. De-stalks up to 30% in some vintages. Fermentation in enamel lined stainless steel cuve or wooden foudres with an 8-10-day cuvaison. Chaptalisation averages 1%. The temperature of the fermentation is 25°C at the start, rising to a max of 30°C. Important that CO2 is retained. Remontages are carried out twice a day and one pigeage per day. Vaslin press and press wine blended back. Racks after malos in the spring. Aged for 7 months in old foudres. No fining, filtered by kiesleghur and bottled in late April. Total production-5,000 bottles
