    Grape:100% Chardonnay (13% alc.)

    Succulent chardonnay fruit, good balance, and a slightly salty, chalky aftertaste define this excellent value wine. For drinking now to 2011.

    Winemaker: Pierre-Antoine Jambon in charge since 1999. Has vinified in Germany, Alsace, Bordeaux (Beausejour-Becot)

    10 hectares (6 white, 4 red) 
    Grape: Chardonnay, planted at 8000 vines per hectare. 70% 15-20 yr-old vines, 30% 40-yr old vines. 
    Terroir: Quite a steep south/south-west facing hillside. Well protected on all sides. Limestone and clay mix. 
    Viticulture: Do their own grafting. Aims at 10-12 bunches per vine. Hoes the soil once a year. Hand harvest. 48-50 hectos per hectare (30% less than max of appellation). 
    Vinification: Pneumatic press, natural yeasts. The wine is racked off the gross lees after 24 hours. Every process is done by gravity, pumps are not used. Left on fine lees in cement cuves until bottling in May. Unfined but filtered by kieselghur.
