    Cécile’s small holding of 50 year old vines lie on the upper slope of this 1er cru just to the east of the village. There is little soil here and the vines are very close to the limestone rock. She produces just three barrels, ageing the wine for a year before racking and transferring to stainless steel cuve for another four months prior to bottling. Quintessential Chambolle (60% destalked), it has a beautiful nose of crushed, fresh cherries and the sylish fruit has both delicacy and intensity on the palate with a mineral undertone. Will make a beautiful bottle in 4 years per Cécile. Very limited quantity. For drinking 2012 to 2018.

    Grape: 100% Pinot Noir, 50 years old. The vines are trained cordon de Royat and planted at 10,000 vines per hectare. 
    Terroir: At top of 1er Cru. Almost no soil (just 10-25cm) hard on the rock, which outcrops in places. Limestone-clay soil on kimmeridgian limestone. South-easterly aspect. 20% slope. 
    Viticulture: Bio-dynamic viticulture. Prune old branches off in March when sap is down completely. Plough 4 times from spring to mid-July, stopping at veraison. Debud but never carry out vendanges en vert. Use Bordeaux mix against oidium and mildew. No insecticides. Sometimes use a little compost. Always looks for maximum phenolic ripeness. Grapes sorted carefully by hand in the vineyard and then again with a table de trie in the cave. Large team of harvesters employed. Yield averages 30 hectos per hectare but has recently been much lower. 
    Vinification: Destemmed 80% though this varies widely from year to year, dependent on the ripeness of stalks. 2 pigeages and 2 remontages during 4 week cuvaison. No pumps. Press wine vinified and aged apart. Use vertical press. Aged in oak for 1 year where malolactics take place. 40% new. 40% 1 yr, 20% 2 year for 1 year, then cuve aged for 6 months. No fining, no filtration. Bottles herself in March.
