Les Bas Doix is a very well placed lieu-dit on the hillside next to Vougeot and the 1er cru of Les Hauts Doix at the south end of the village.The vines here are two thirds 15 years old and one third 40 years old. Slightly riper and with a touch more density of fruit and structure than Amiot’s village Chambolle. For drinking now to 2014.

domaine:6.5 hectares Grape: Pinot Noir on 161-49 root-stock. Carefully selected fine clones rather than massale selection. Training is guyot and cordon de royat, average vine age is 20 years and plant density is 10,000 vines per hectare. Terroir: Limestone and clay (Argilo calcaire). East facing slopes with 10% gradient at 250-300 metre altitude. Soil depth is 80cm to 1 metre. Viticulture: De-buds and occasional green-harvest. Plough the soil in the winter and spring with 2-3 in between. Rows are not grassed at the moment. Use copper to combat mildew and sulphur for oidium. ‘Confusion sexuelle’ to stop pests regenerating. Natural compost when required. Manual harvest and then use a vibrating sorting table (table de trie) to eliminate imperfect fruit. Yield of 38 h/h Vinification: Grapes are de-stemmed but not crushed prior to a pre-fermentive maceration for 5-6 days at 12°C. Fermentation with natural yeasts (at 30 to 32°C) lasts for around 10 days in temperature controlled stainless steel cuves. Chaptalisation by 0.5 degrees. There will be around 12 pigeages and 5-6 remontages during the fermentation. Press wine (Pneumatic) is added straight back to the assemblage. A 16-18 month élevage in medium toast barrels (25% new, 75% 2-3 years old) with batonnage. Racked once after 12months and once before bottling. No fining but a light filtration. One domaine bottling in March using natural cork. Organic certification from the 2007 vintage. Production of 2,000 bottles. Press:
