Thierry has six hectares of vines in some of Gevrey-Chambertin’s prime sites. This is fine pinot noir – it has a wonderfully pure definition of raspberry/strawberry pinot fruit with that typical hint of game and touch of oak to add to its complexity. For drinking now to 2014.

domaine:7½ hectares of which GC - 3 hectares, GCVB – 0.7 hectares GCCP1er – 0.15 hectares Grape: Pinot Noir – GC – 30 yr old ) GCVB – 30 yr old ) selection massale on S04, GCCP1er – 60 yr old ) 3309 and 5BB rootstock 10,000-11,000 vines per hectare ) 10,000-11,000 vines per hectare Terroir: Limestone, clay, 10-30cm of topsoil then on to limestone. Vignes Belles is to the east of the 1er Cru Petite Chapelle - the soil here has a lighter finer consistency with more stones than the village GC. GCCP – gentle easterly slope, very little topsoil (15cm). Eastern aspect to vineyards (and south VB) Viticulture: Debud and carry out vendanges en vert. Plough from spring through to summer. No herbicides, pesticides or fungicides. Use sulphur agasint oidium. Manual harvest. Sort grapes carefully in the vineyard and also back at the cave via a table de trie. Yields GC - average 40 hectos GCVB – average 40 hectos GC 1er Cru – 35 hectos Vinification: Tad of chaptalisation (½%) normal. Destalked 100%. Cold maceration for 3-4 days pre-fermentation. Indigenous, natural yeasts. Pigeage twice a day by hand for 7 days then once a day during a further 14-day cuvaison. Pneumatic press. Assembles free run and press wine. Racks twice – once after malos and once before bottling. Elevage GC = 1/3 new, 1/3 1 year, 1/3 2 year for 12 months + 4 mths in cuve GCVB = 1/3 new, 1/3 1 year, 1/3 2 year for 12 months + 4 mths in cuve GC 1er Cru = ½ new, ½ 1 year for 16 months No fining, filtration by kieselghur.
