Winemaker Pascal Marchand has coaxed a succulent, elegant wine with vibrant red fruits from vines averaging 25 years old. Organic viticulture, low yields (around 35hh) and sensitive oak elevage make this a really attractive village Savigny. For drinking now to 2013.
Technical Information Winemaker: Pascal Marchand, previously head winemaker at Comte Armand and then Domaine de la Vougeraie. Location: Domaine is based in Echevronne. Size of
domaine:10 hectares in total. 4500 bts of SLB from 0.77 hectares (3 lieu-dits). Grape: 100% Pinot Noir. 38 year old vines. Massale selection. 10,000 vines per hectare on 3309 rootstock. Terroir: At the bottom of the hillside. Essentialy flat with a slight tilt to the south-east. Clay and alluvial soil, overlying a fractured limestone base. Deep soil. Viticulture: Have practiced organic viticulture since 1996 but moved to biodynamic viticulture in 2006. Ploughed in winter and spring. Carry out severe debudding and vendanges en vert only if necessary. No weed killers or chemicals or synthetic products of any kind. Use Bordeaux mix against oidium. Use lunar calendar to help with selection of harvest date. Hand-harvested. Yield of 44 hectos per hectare. Vinification: Table de trie at reception of grapes pre and post destalking to ensure any green or spoiled grapes are eliminated. 100% destalked. Use natural yeasts only. 5 days cold maceration at 7 to 8°C looking for extra fruit. Pigeage during alcoholic fermentation (7 to 8 days). Then remontage during cuvaison. Total vinification time 4 weeks. Pressed by pneumatic press and press wine assembled from start. Transferred into new to 3 yr old 225ltr barrels. Malos completed in barrel. Racked once after malos. 16 months in oak. Assembled, fined if necessary by bentonite and filtered if needed by kieselghur. Bottled using their own equipment. Press:
