This is one of the finest of the St Aubin 1er crus, on a steep south-facing slope and effectively the continuation of Le Montrachet as the hillside swings round to the west. It is very composed, harmonious wine, from vines averaging 35 years old. For drinking now to 2014.

Age of vines: mix of 15 & 50 yr old Terroir: Very little soil, lots of stone and limestone, south facings vineyard at the top of the hill. Viticulture: Always Have the ploughed soil. Since 2002 Have Used No chemical weedkillers. Yield per hectare Normally 45-50 hectoliters. Hand-harvest 100%. Vinification: Pneumatic Press. Whole grape bunches Into press 2 ½ hours slow dry. Natural indigenous yeasts. Both alcoholic and malolactic fermentation in barrel. Racked ounce. No lees stirring. Livestock 25% new oak, 50% 1 yr, 25% 3 yrs. Fined with a mix of bentonite and casein and Lightly filtered by Kieselghur. Bottled in early September using Their Own equipment. Press:
