    Grape:100% Chardonnay (13% alc.)

    Fontenotte is a tiny vineyard next to the premier cru of Les Champlots. Aged in 2/3 oak and 1/3 cuve to preserve freshness, it is a crisp, racy wine. For drinking now to 2011.

    20 hectares (of which 7.5 planted with pinot). 10,000 bts of Fontenotte. 
    Grape: Chardonnay (10 yr old) (young vines) 10,000 vines per hectare. 
    Terroir: Quite a cold terroir in a combe, just to the north of Les Champlots next to Gamay; 20 cms soil; white soil not very stony at all. Limestone base. 
    Viticulture: Harvest this parcel latest of all St Aubin vineyards (15 days after start of harvest). Have always ploughed the soil. Since 2002 have used no chemical weedkiller. Hand harvest 100%. 
    Vinification: Pneumatic press. Whole grape bunches into press 2½hrs pressing. Natural indigenous yeasts. Malos in oak allowed to start without heating up cave. Racked once. No batonnage. 100% in barrels, 15% new, 3 yr old max. Fined with a mix of casein and bentonite, filtered by kieselghur. Normally bottled in July using their own equipment.
