domaine:7 hectares after 2005 harvest. Produces 4,000 bottles of Aligoté Grape: Aligoté, 40 yrs old Terroir: Hillside vineyards in Nantoux, limestone-clay soil. South-east aspect. Viticulture: Vineyard is allowed to grow grass to help limit the yield and prevent erosion. Debud and carry out vendanges en vert if necessary. Uses fungicide against oidium. Hand-harvest 100%. Vinification: Pneumatic press. Vinified and aged in stainless steel tank. Uses natural, indigenous yeasts. Malolactics completed. Elevage on fine lies for 10 months. Racked once at the end. Fined and lightly filtered by kiesleghur (only if absolutely necessary). Use their own bottling equipment. Press:
