Les Clos is considered to be Chablis’ finest grand cru, and this wine from 30 year old vines is the epitome of its style. From a soil developed on Kimmeridgian limestone – rich in oyster shell fossils, it is very concentrated, with great depth of fruit and a notable reserve. For drinking now to 2015+.

domaine:11.8 in total. 2.57 hectares of Grand Cru Les Clos Grape: Chardonnay. Planted in 1962, 1979 and 1985. Average 30 yr-old – planted high, mid and lower slope. Selection massale on 41B rootstock. 7500 vines per hectare. Terroir: Very little soil, stony on pure kimmeridgian limestone. Many oyster fossils weather out on the surface. Viticulture: Debud every year, vendanges en vert only if necessary. Plough the soil once during winter and twice during the summer. No herbicides or pesticides. Use organic fertilisers from time to time. 100% hand harvest. 42 hectos per hectare average. Vinification: Pneumatic press. Selected yeast VLI Zymaflore. Vinifies at 20 to 24°C in 20% in 1 yr old barrels and 80% in cuve then aged in 1, 2 and 3 yr old barrels. Malolactics in barrel. Aged on the fine lees for 14 months. Racked once. Fined if necessary, filtered by plaque. Bottled in December using their own equipment. Press:
