We were initially drawn to Pinson by their outstanding Mont de Milieu in the difficult 1999 vintage. From 25 year old vines on a southerly slope, the wine is ripe but with a gun-flinty smokiness and lip-smacking minerality. Bone dry and very chalky, it is superb with shellfish. For drinking now to 2015+.

domaine:11.8 hectares total 4.75 Mont de Milieu – 75% 20-yr old, 25% 45-yr old 0.70 La Foret – 48 yr old 0.34 Vaugiraut – 15 yr old Grape: Chardonnay. Rootstock 41B, S04, 161.49, Fercal. Selection massale and clones CH76, 95, 96, 248. 7500 vines per hectare Terroir: Mont de Milieu – due south. Lies to the south of sthe grand cru belt together with Montée de Tonnerre La Foret – almost hard on the kimmeridgian limestone with very little soil. Only 15° slope. Same hillside as Montmains but more active limestone (Kimmeridgean) Vaugiraut – Vines near village of Chichée, due south facing. Viticulture: Debud every year. Vendanges en vert only if necessary. Plough 3 to 4 times during the summer. No herbicides or pesticides. Use organic fertilisers in winter from time to time. Manual harvest. 45-50 hectos per hectare. Vinification: Pneumatic press. Selected yeast – VLI Zymaflore. Vinifies at 20 to 24°C. Mont de Milieu - ferments 90% in cuve and 10% new oak barrels , 90% aged in 3-4 yr old barrels and 10% in new La Foret - 100% ferment in cuve; then aged in 3-4 yr old barrels for 7 months Vaugiraut - 75% ferment in 3-6 yr old barrels, 25% in cuve; elevage 100% in 3-6 yr old barrels for 7 months. Chaptalised ½% in 07, occasional batonnage. Malolactics in barrel. Fined if necessary, filtered by plaque. Bottled in September using their own equipment. Press:
