    Grape:100% Chardonnay (12.5% alc.)

    This wine comes from a two hectare vineyard on a hillside next to the premier cru of Vaillons. From hand-harvested vines with a restricted yield, it has a lovely ripeness of fruit, with a textbook chalky, salty minerality. For drinking now to 2011.

    Grape: Chardonnay. 15 yr old average. Clonal selection. 7500 vines per hectare.  
    Terroir: Very stony soils on kimmeridgian limestone in the valley between Montmains and Vaillons. 
    Viticulture: Debud every year, vendanges en vert only if necessary. Plough the soil once during winter and twice during the summer. No herbicides or pesticides. 100% hand harvest. Yield 60 hectos per hectare. 
    Vinification: Pneumatic press. Selected yeast VLI Zymaflore. Vinifies at 20°C to 24°C. Ferments and ages 100% in cuve. Malolactics completed. Aged on the fine lees for 9 months. Racked once. Fined if necessary, filtered by plaque. Bottled in June using their own equipment.
