domaine:9 hectares of which 2 produce Les Graviers Grape: Cabernet Franc. Massale selection. Planted on 3309 rootstock. 40 year old vines. Trained single guyot or poussard. 4500 vines per hectare. Terroir: South-facing gentle slope. Gravelly top soil with limestone base 0.5 to 1m below. Viticulture: But the vines up during autumn, and debut in spring. Debud, no green harvest. Allow natural grass to grow and then plough when necessary. Use Bordeaux mix against oidium and a spray made from ‘osier’ (willow). Use concoctions of nettles and prele against pests. Occasionally use a bio-dynamic compost 1 row in two. Manual harvest. Yield of 32 h/h. Vinification: Initial maceration in cement cuve at 16ºC for 5 days. Fermentation then continues between 18 to 23ºC for 20 days. Destalk 100% and crush by foot for 5 minutes. Fermented in cement cuve with natural yeast. No chaptalisation. Carry out 1 pigeage a day during 12 day fermentation and 3 times during the subsequent 5 day cuvaision. Vasslin cage press used – press wine kept separate and assembled 1 month before bottling. The wine is aged in 50hl 15 year old foudres. Racked once. Aged for 10 months on average. No batonnage, no fining, no filtration. Bottled 3 times a year in May, September and January.
