    Grape:100% Cabernet Franc (12.5% alc.)

    A micro-cuvée from a micro domaine. Low yields of 40hh from 20 year old vines. After destalking, the wine is fermented with a 60 day maceration at just 12° centigrade to extract a kernel of silky fruit and no harsh tannins (the winemaker’s version of slow cooking).The wine is then aged in four year old barrels for 16 months. It has a fabulous vibrant raspberry colour and depth of natural cabernet fruit. For drinking now to 2012.

    Grape: Cabernet Franc, 50 year old on 3309 rootstock. 4,500 vines per hectare, trained single guyot. The vines are trained 2 metres high. 
    Terroir: Limestone and clay, 10% slope tilted south-east. There is a shallow 50cm to 1.5m soil above the limestone.  
    Viticulture: De-buds but no vendanges en vert. Ploughing from May to July to control weed growth and hoeing underneath each vine. Sulphur and Bordeaux mix are used against oidium and mildew. No pesticides. Organic compost sometimes used in early spring. Manual harvest. Table de trie. Yields average 40hh.  
    Vinification: 5 days of pre-fermentation. Maceration before start of fermentation at 13°C (the temperature of the cave). Destalked 100%. Cement cuve used for fermentation, indigenous yeasts. No chaptalisation. Average temperature of fermentation is 17°C. Checked daily. One remontage at the start of ferment then no remontage or pigeage. The fermentation lasts for 45 days. Vertical press and then free run and press juices are assembled. 4 and 5 yr old 225 ltr barrels for the elevage. No racking. 14-18 months elevage. No batonnage. No fining or filtration. Bottled by contract bottler. 7000 bts per year.
