Bailly’s classic Sancerre has a typical gun-flint nose and steely fruit. The vines are planted on the steep well-exposed slopes of Bué which have a particularly stony base. For drinking now to 2012.

domaine:18 hectares Grape: Sauvignon. 18 yr old (on average) vines trained single guyot. Density 6,500 vines per hectare. Rootstocks- 41B, SO4, Fercal, 3309. Clonal selection. Terroir: 70% kimmeridgian limestone soils, 30% limestone-clay. Altitude 250- 350 metres facing south –south east with a gradient varying between 5-35%. Depth of soil 20-60cms. Viticulture: De-bud and green harvest. Grass between rows is controlled/managed. Alternatively soil harrowed between rows. Organic fertiliser and sulphur to prevent oidium. Sustainable viticulture- ‘Lutte rasisonné’. Machine harvested and then a table de trie. Yield 60 H/H Vinification: De-stalked between 20 and 70% but not crushed. Fermented in temperature controlled stainless steel and enamel lined vats at 16-21°C and for 15-30 days. Chaptalisation if necessary. Natural yeasts. Pneumatique press and press wine kept separate. No malo. Left on fine lees until bottling in Spring. One racking. Kieselguhr filtered. Bottled between 5-10 times per vintage using their own equipment. Production 100,000 bottles Press:
