    Grape:100% Melon de Bourgogne (12% alc.)

    This comes from 40 to 75 year old vines on the banks of the river Maine. It has denser fruit than the Quilla and is a very focused, intensely mineral wine that is absolutely delicious. Bring on the shellfish! For drinking now to 2013.

    Grape: Melon de Bourgogne, 40-75 years of age 
    Terroir: On the north banks of the River Maine on a soil derived from amphibolite – a bluey-green metamorphic rock consisting mainly of hornblende (a dark-coloured mineral made up of silica, magnesium, lime and iron). 
    Viticulture: No chemical weedkillers or fertilisers (agriculture raisonée) 6500 vines per hectare yielding 40-50 hectos per hectare. Manual harvest 100%. Leave grass during winter – burn in spring and summer. 
    Vinification: Pressed (use horizontal press) and left overnight before separation from the gross lees. No chaptalisation. Malo-lactic fermentation never takes place. Left on the fine lees and aged in glass lined underground cuves. Not fined but filtered lightly by plaque before bottling in September-December, 12-15 months after harvest.
